Orange Cilantro Vinaigrette

Two weeks ago, I stumbled upon a recipe for an orange vinaigrette at one of my favorite food blogs, Eggs on Sunday.  The idea instantly appealed to me, especially as the author pictured it – drizzled over greens, caramelized walnuts, and fresh strawberries.  Heavenly.
I still had the recipe in the back of my mind when I [...]

We’re in crisis mode this week, so don’t look for glamor on the menu below.  Fast, easy, and simple are key words at the moment.  The end of the week is especially leftover-heavy since my husband will be out of town.
Monday: Rotisserie chicken, green salad with oranges, red onion, avocado, and orange vinaigrette (recipe forthcoming), leftover baked [...]

Ladies and gentleman, I would like to introduce my dear friend, Bernard.

We met at the Bayou City Farmers’ Market two weeks ago.  This unassuming, unidentified squash is something of a country bumpkin, so he’s a little shy around the camera.  Fortunately, I convinced him to share his good side with you.

Menu Plan Monday, June 23

It’s menu planning time again, and, boy, do I need it!  Last week was hectic, and this week will likely be even more so.  Trying to be realistic, I’ve scheduled easy meals, and I’m prepping lots of raw vegetables for random munching and snacking.  I’m a stress eater, so it’s important for me to keep healthy [...]

Go ahead.  Indulge yourself with one of these quick, healthy, and satisfying summertime snacks.  I love how cooling they feel on the way down — perfect for these sweltering days of 90-something degree heat.
Option A:  Whip out a ripe, juicy tomato from your farmers’ market, slice it thickly, and gently kiss it with a dollop of soft goat cheese from [...]

Summer Guacamole

Simple guacamole is a beautiful thing and well worth celebrating.  Buttery, rich avocados with only lime, cilantro, and salt can be sublime.  Every once in a while, though, I find it refreshing to step outside the box and mix up the routine with some extra summer veggies.  Right now is the perfect time to do that, at least in [...]

I have got a lot of catching up to do in this house, especially when it comes to using up the fantastic vegetables I’ve been buying at the farmers’ market.  The meals I had planned for last week produced a lot more leftovers than I anticipated, so I never did get to all of the [...]
