Boy, did I ever have unrealistic expectations for last week! When putting together my menu plan last Sunday, I somehow forgot that I had just returned from vacation and was wiped out from the car trip, it was my first week of a new semester, and that I had multiple medical appointments scheduled. Why did I think that I would be able to prepare a new meal every night, stick to a stricter-than-Maker’s Diet diet, and make cultured vegetables? Perhaps I momentarily forgot I’m not Superwoman. The week than unfolded more than reminded me of my lack of super powers. Last week was grueling for multiple reasons, some of which I’ll write about later. For now, I’ll simply say that I am going easy on myself over the next few days. No menu plan until Tuesday evening? No problem! Easy dinners? That’s right! Lots of leftovers? Oh yeah!
I feel better already.
Tuesday: Grilled hamburger patties, grilled okra, leftover cream peas, and a green salad with carrots, celery, red cabbage, and shredded zucchini
Wednesday: Leftovers
Thursday: Moroccan Roast Chicken(leg quarters), steamed veggies, quinoa (for J only), and a green salad with veggies
Friday: Leftovers
Saturday: Pot roast, green beans, broccoli, and green salad
Sunday: Chicken vegetable soup
